Aceto balsamico has a dark color, a thick and rich aromatic taste that will give food a special stamp. It is used in Mediterranean cuisine as a seasoning for radicchio, arugula, bean or tomato salads, and as a final note to fish, squid or shrimp. It also goes well with meat dishes made of game, pork or lamb. It is made from boiled must of white grapes, which is transformed into vinegar during a long process during natural fermentation. Aging concentrates the vinegar, and it gets its final color and aroma by pouring it into barrels made of different types of wood. Every year, the vinegar is mixed with young vinegar and moved into smaller and smaller barrels.
