The original origin of zucchini is not precisely determined. Some types of zucchini are native to India while some are from America and come in a variety of sizes, shapes and colors. Zucchini that are most often used in our climate are oblong and cylindrical, green in color and thin wrinkled skin. Their flesh is soft and pale greenish. We divide them into summer and winter, and the only difference is that summer ones have thinner and softer skin than winter ones. Although zucchini is a botanical fruit, it belongs to the species Cucurbitaceae, which includes melons and cucumbers, and in the kitchen they are treated like all other vegetables.
