Kale is a leafy vegetable, a variety of cabbage, with specific characteristics that make it a separate vegetable crop. Kale was already known to the Greeks and Romans. In the 4th century BC, three types of kale were distinguished: wild, curly, and smooth kale. Kale as we know it today was allegedly created by selection by valuable Belgian gardeners in the 18th century. From Belgium he spread first to France and then to the Netherlands and Germany, to soon conquer all of Europe. Fresh heads of kale are available almost all year round, but the peak of their season is from late autumn to early spring. Look for heavier, dark green heads with firm central parts of the leaves.
