Since bananas are picked from the tree while they are still green, it is not uncommon to find greenish ones in stores or greenish ones delivered to you. In general, bananas should be firm, but not too, shiny surfaces, without major damage. Leave the yellow bananas with a few green ends to ripen at room temperature, if they are not ripe enough for your taste. Yellow bananas with small brown spots are ideal for consumption the same day. Ripe bananas, even when their peel begins to darken, the flesh remains intact and as such can be consumed. Store such ripe bananas in the refrigerator for a few days, but put them at room temperature before eating.
